These rice paper rolls have always been one of my favourite lunch box meals! In primary school, my mum would always make them for me when I went for overnight excursions. I loved these yummy treats every once in a while and would always savour them! I would often (regretfully) save them to eat over the excursion instead of the camp food!

Though these aren’t traditional compared to vietnamese fresh spring rolls, this is a great recipe that all vegetarians (and meat eaters) have to try! For any teenagers reading, this recipe is super simple to make and is great for your body! It is also an amazing lunch box idea!

Vegetable Rice Paper Rolls

Prep: 20 Mins Cook: -

11 Ingredients | 4 Serves

INGREDIENTS:

  • About 50g vermicelli rice noodles

  • 4 rice paper sheets (22cm diameter)

  • Β½ an Avocado Sliced into strips

  • Β½ large carrot, peeled and grated

  • Β½ cup iceberg lettuce, shredded

  • Β½ red capsicum, sliced

  • Β½ cucumber, sliced

  • 12 sugar snap peas, sliced in strips

  • Mint leaves

  • Coriander leaves

  • Sweet chilli sauce, for serving

DIRECTIONS:

  1. Place your vermicelli rice noodles in a bowl of boiling water to soften for 5-8 minutes. When they have softened, remove them from the water and dry slightly. 

  2. In a bowl of lukewarm water, wet your rice paper sheet. Then remove it and place it onto your prepared benchtop or chopping board. 

  3. With your pre-cut vegetables, place a small amount of each in the centre of the sheet. The order I use is lettuce, rice noodles, cucumber, carrot, sugar snap peas, capsicum, avocado, mint and coriander. 

  4. Grab the bottom of the paper and roll it over the vegetables, tucking them in as you go. Once they are tucked in, fold in the sides and roll the rest up. 

  5. Serve your rice paper rolls with a sauce of your choice. Serve immediately and enjoy!

NOTE:

Feel free to add any vegetables or protein sources that you enjoy! Get creative!
