This quick and easy chicken stir fry is a great meal for people of all ages! Not only does it take 20 minutes to cook and is easy for all inexperienced cooks, but it is loaded with veggies, flavour and protein (perfect for a lunchbox!)

This stir fry is a great way to enjoy takeout style food without any of the guilt! It is such an easy meal to throw together with any food you may have around the house. What’s great is how easy it is to experiment with proteins, veggies and sauces!

Chicken Stir Fry

Prep: 10 Mins Cook: 18 Mins

15 Ingredients | Serves 2

INGREDIENTS:

Stir Fry-

  • 200g Chicken strips (cut into pieces)

  • 1 Cup broccoli pieces

  • 1 Carrot (sliced into pieces)

  • Β½ Cup capsicum pieces

  • Β½ Bok choy (sliced into pieces)

  • Β½ Onion

  • Handful of snow peas

  • 2 Tablespoons olive oil

  • Sesame seeds, to taste

  • Salt and pepper, to taste

Stir Fry Sauce-

  • 2 Tablespoons soy sauce

  • 1 Teaspoon sesame oil

  • Β½ Teaspoon ground ginger

  • 1 Teaspoon rice vinegar

  • 2 Large garlic cloves

DIRECTIONS:

  1. In a bowl, combine all ingredients for the stir fry sauce.

  2. Heat 1 tablespoon of oil in a large pan over medium heat.

  3. Add the chicken and allow it to cook for about 7 minutes until golden brown and completely cooked through.

  4. Remove the chicken from the pan and add the onion as well as the last tablespoon of oil. Stir for about 2 minutes until soft. 

  5. Add the broccoli, carrot, capsicum, bok choy and snow peas and stir until slightly softened (about 4 minutes).

  6. Add the stir fry sauce to the veggies and allow to simmer for another 4 minutes. Return the chicken to the pan and stir until heated through.

  7. Serve and eat immediately after garnishing with sesame seeds and salt and pepper.

NOTE:

Feel free to add any vegetables that you’d like!
