Healthy Lemon Yogurt Cake!
This quick and easy Lemon Yogurt Cake recipe is a delicious (not to mention healthy!) snack or dessert recipe that will blow your family away!
When I tell you that this is probably one of the easiest cakes in the world, I mean it!
As well as being one of my all time favourite cake recipes, this yogurt cake recipe is perfect for any beginning bakers in the kitchen!

This crazily easy and delicious lemon yogurt cake has a moist inside with a delicious soft crumb around the edges. Yum!

Healthy Lemon Yogurt Cake!
Prep: 10 Mins Cook: 35-40 Minutes
8 Ingredients | 8 Serves
INGREDIENTS:
1 Cup plain yogurt
2 Cups self-raising flour
½ cup caster sugar
½ Scant cup oil ( I used coconut oil)
2 Eggs
2 Teaspoons baking soda
½ Teaspoon vanilla essence
Zest of 1 lemon
1 Pinch salt
DIRECTIONS:
Preheat the oven to 180C° and line a 9x5 inch loaf pan with baking paper.
Mix eggs and sugar, then add oil, lemon zest, vanilla essence and mix again. Add yogurt (not very cold) and mix it into a smooth consistency.
In a separate, whisk flour, baking powder and a pinch of salt together and add to the wet batter until just combined.
Pour the batter into the prepared pan and smooth the top.
Bake for 35-40 minutes, or until a skewer comes out clean.
When the cake is finished, remove it from the oven and place on a wire rack to cool.
Serve and enjoy!
